My husband and I wanted something sweet today ... so I decided to bake cookies.
I am trying to watch my weight with the wedding coming up and this recipe makes just 24 cookies (unlike some recipes that make 4 or 5 dozen cookies) so I decided to give it a try. I figured if I had 12 cookies and my husband had 12 cookies we couldn't gain much weight! LOL
They are called Mud Pie Cookies.
I remember making mud pies when I was a little girl a long time ago with my sister. Isn't it funny how a recipe can bring back so many memories. Believe me these don't taste like mud :)
Mud Pie Cookies
1/2 cup butter, softened
1/2 cup packed brown sugar
1/4 cup granulated sugar
1 egg
1/2 teaspoon vanilla
1/2 cup self-rising flour
1/4 cup unsweetened cocoa powder
1-1/2 cup rolled oats
1/2 cup chopped pecans
Preheat oven to 350 degrees. In a large bowl beat together butter and sugars until creamy. Beat in egg and vanilla. In a medium bowl, combine flour and cocoa. Add to butter mixture and mix well. Stir in oats and pecans.
Drop by rounded tablespoons onto an ungreased cookie sheet. Bake 10 to 12 minutes. Cool 1 minute on cookie sheet before transfering to wire rack. Makes 24 cookies.
If you like chocolate and you need something quick these are very easy.
Thanks for visiting.
God Bless,
Donna

Oh thank you Donna! Those look yummy and I think my honey would love them :)
those look AWESOME they may not be all that great for keeping my waist line little but it sure looks like a good way to expand it! I can't wait to make some myself ( and 12 for me just for some reason doesn't seem like enough! lol) would you mind if I linked the post to my blog?
well it won't let me link so may I copy the post and just link it to you that way?
